Every time you use your knife, the microscopic teeth get bent. So it’s crucial to use the steel, in order to straighten those tiny little teeth.
There’s a common misconception that using the steel on the knife is sharpening the knife. In reality, the only way to sharpen a knife is by using a sharpening stone. And every time you use the stone, some of those little teeth get lost.
